  • 1/2 cup tapioca flour

  • 1 egg

  • Salt to taste

  • Filling to taste (cheese, ham, tomato, herbs, etc.)

Directions

  • In a bowl, mix the tapioca flour and salt.
  • Heat a non-stick frying pan over medium heat.
  • Spread the tapioca flour evenly on the hot skillet, forming a thin layer.
  • Let it cook for about 1-2 minutes, until the tapioca starts to come together and form a “pancake”.
  • Meanwhile, beat the egg in a bowl and season with salt to taste.
  • Pour the beaten egg over the tapioca in the pan.
  • Let cook for another 2-3 minutes, until the egg is cooked.
  • Add the filling of your choice over half of the tapioca with egg.
  • Fold the tapioca in half, covering the filling, and press lightly to seal.
  • Slide the tapioca onto a plate and serve hot.
