Ingredients

  • 2 medium eggplants

  • 2 ripe tomatoes

  • 1 onion

  • 2 garlic cloves

  • Extra virgin olive oil

  • Salt and pepper to taste

  • Fresh herbs (such as basil or oregano) or dried to taste

  • Sliced ​​or grated mozzarella cheese

  • Sliced ​​black olives

Directions

  • Preheat the oven to 200°C.
  • Wash the eggplants well and cut them into medium slices.
  • Place the eggplant slices in a colander, sprinkle salt over them and let them rest for about 15 minutes. 
    This will help eliminate excess moisture and bitterness from the eggplant.
  • While the eggplants are resting, chop the tomatoes, onion and garlic cloves.
  • After 15 minutes, rinse the eggplant slices to remove the salt and dry them with paper towels.
  • In a baking dish, distribute the eggplant, tomato, onion and garlic slices. 
    Drizzle with olive oil.
  • Season with salt, pepper, and herbs of your choice.
  • Add slices of mozzarella cheese on top of the eggplants.
  • Spread the sliced ​​olives over the cheese.
  • Bake for about 25-30 minutes, or until the eggplants are soft, the cheese is melted and golden.
  • Remove from the oven and serve hot. 
    You can garnish with more fresh herbs before serving.
