For your Fofo Cake to be perfect, use the ingredients below, following the step-by-step preparation method.

Ingredients

  • 3 eggs

  • 2 cups sifted wheat flour

  • 1 cup of milk

  • 2 cups of sugar

  • 1/2 cup vegetable oil

  • 1 tablespoon powdered yeast

  • 1 teaspoon vanilla essence (optional)

  • A bit of salt

Directions

  • Preheat the oven to 180°C. 
    Grease and flour a cake tin approximately 23 cm in diameter.
  • In a large bowl, beat eggs and sugar until fluffy and pale.
  • Add vegetable oil and milk to the egg-sugar mixture, stirring well until smooth.
  • Add the sifted wheat flour little by little, mixing gently with a spatula or fouet. 
    Be sure to incorporate the flour well, but avoid over-mixing as this will make the cake heavy.
  • Add the vanilla essence (if using) and a pinch of salt, mixing again.
  • Lastly, add the baking powder and mix gently until it is well incorporated into the dough.
  • Pour the batter into the prepared pan and smooth the surface.
  • Place in the preheated oven and bake for about 30 to 40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool for a few minutes in the pan before transferring it to a cooling rack.
  • Once fully cooled, you can decorate the cake as you wish and serve.
