Ingredients
1 head of garlic (approximately 10-12 cloves)
1 tablespoon olive oil
1 tablespoon of butter
1 medium onion, chopped
2 medium potatoes, peeled and cut into cubes
4 cups chicken or vegetable broth
1 cup of cream
Salt and pepper to taste
Chopped parsley for garnish (optional)
Directions
- Preheat the oven to 200°C.
- Cut off the top of the garlic head to expose the cloves.
- Place the head of garlic on a sheet of aluminum foil, drizzle with a little olive oil and wrap.
- Bake in the oven for about 30-40 minutes, or until the garlic cloves are soft and golden.
Let it cool a little. - In a large pan, heat the olive oil and butter over medium heat.
- Add the chopped onion and sauté until it becomes transparent.
- Add the diced potatoes and roasted garlic cloves (squeeze the garlic cloves to extract the pulp).
- Pour chicken or vegetable broth into the pan.
Bring to a boil, then reduce heat and simmer until potatoes are tender. - Use a blender or mixer to puree the soup until it reaches a creamy consistency.
- Return the soup to the pan over low heat and add the cream, stirring well.
- Season with salt and pepper to taste.
- Heat the garlic cream until ready to serve.
