Make a leek quiche using the ingredients below and following the preparation instructions.

Ingredients

  • 1 and 1/4 cup of wheat flour

  • 1/2 cup cold butter, cut into cubes

  • 1/4 teaspoon salt

  • 3 to 4 tablespoons of ice water

  • 2 medium leeks, sliced

  • 2 tablespoons of butter

  • 1 cup Gruyère or Swiss cheese, grated

  • 4 eggs

  • 1 cup of cream

  • Salt and pepper to taste

  • Nutmeg to taste

Directions

  • In a large bowl, mix the wheat flour and salt.
  • Add the cold butter cut into cubes. 
    Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.
  • Add the ice water, one tablespoon at a time, until the dough starts to come together.
  • Form the dough into a ball, cover it with plastic wrap and refrigerate for at least 30 minutes.
  • Preheat the oven to 180°C.
  • In a frying pan, melt the butter over medium heat. 
    Add the sliced ​​leeks and cook until softened, about 5 minutes. 
    Reserve.
  • In a bowl, beat the eggs. 
    Add the cream, grated cheese, salt, pepper and nutmeg. 
    Mix well.
  • Roll out the dough on a floured surface and line a quiche pan. 
    Poke holes in the base with a fork.
  • Spread the leeks over the dough and pour the egg and cream mixture over the top.
  • Bake in the preheated oven for 30 to 35 minutes, or until the quiche is golden and firm to the touch.
  • Let cool slightly before cutting into slices and serving.
