Ingredients

  • 1 bunch of coriander

  • 1 bunch of parsley

  • 2 garlic cloves

  • 1 small onion

  • 1 lemon juice

  • 1/4 cup olive oil

  • Salt to taste

  • Pepper to taste (optional)

Directions

  • Wash the coriander and parsley well and remove the thickest stems.
  • Peel the garlic cloves and onion.
  • In a blender or food processor, place the coriander, parsley, garlic and onion cut into small pieces.
  • Add lemon juice, olive oil, salt, and pepper, if using.
  • Beat all ingredients until you obtain a homogeneous mixture of the desired consistency. If necessary, add a little more olive oil to achieve the desired texture.
  • Taste and adjust the seasoning as preferred, adding more salt, lemon or pepper if necessary.
  • Transfer the green sauce to a container and serve as an accompaniment to meat, fish, salads or snacks.
  • Store any unused sauce in an airtight container in the refrigerator for up to a week.
