Ingredients

  • 2 1/4 teaspoons dry yeast

  • 1 1/2 cups warm water

  • 4 cups of wheat flour

  • 1 teaspoon of salt

  • 2 tablespoons olive oil

  • 1 can (400g) peeled tomato

  • 2 cloves of garlic, chopped

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Oregano to taste

  • Grated mozzarella cheese

  • Optional ingredients: pepperoni, mushrooms, peppers, onion, olives, ham, etc.

Directions

  • In a small bowl, mix the yeast with the warm water and let it sit for about 5 minutes, until it starts to foam.
  • In a large bowl, mix the flour and salt. Make a well in the center and pour in the yeast and water mixture.
  • Add the olive oil and mix until a homogeneous dough forms.
  • Transfer the dough to a floured surface and knead for about 5-10 minutes, or until it is smooth and elastic.
  • Place the dough in a bowl lightly greased with olive oil, cover with a clean kitchen towel and let it rest in a warm place for about 1 hour, or until it doubles in size.
  • In a frying pan, heat the olive oil over medium heat. Add the chopped garlic and sauté until lightly browned.
  • Add the peeled tomatoes, crushing them with a spoon. Season with salt, pepper and oregano to taste.
  • Let the sauce cook over low heat for about 20-30 minutes, stirring occasionally, until it thickens.
  • Preheat the oven to 220°C.
  • Divide the dough into two parts and roll each one out on a floured surface, forming pizza discs.
  • Transfer the dough to a lightly floured baking sheet or pizza stone.
  • Spread the tomato sauce over the pasta.
  • Distribute the grated mozzarella cheese evenly over the sauce.
  • Add desired ingredients as topping.
  • Place in the preheated oven and bake for around 12-15 minutes, or until the pastry is golden and the cheese is bubbly.
