Ingredients
3 eggs
1 cup of sugar
1 cup coconut milk
1/2 cup vegetable oil
1 and 1/2 cups of wheat flour
1 tablespoon baking powder
1 can of condensed milk
1 cup coconut milk
Freshly grated or flaked coconut for sprinkling
Directions
- Preheat the oven to 180°C. Grease a medium rectangular baking tin (approximately 20x30cm) with butter and sprinkle with wheat flour.
- In a large bowl, beat the eggs and sugar until light and fluffy. Add the coconut milk and vegetable oil, mixing well. Gradually add the sifted wheat flour and mix until smooth. Finally, add the baking powder and mix gently.
- Pour the batter into the prepared pan and bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely in the pan.
- In a bowl, mix the condensed milk with the coconut milk until smooth.
- Once the cake is cool, poke holes all over its surface with a fork or toothpick. Pour the condensed milk and coconut frosting over the cake, spreading it well so that it penetrates the holes. Sprinkle freshly grated coconut or flaked coconut on top.
- Cover the cake with aluminum foil or plastic wrap and refrigerate for at least 2 hours, so that it is well chilled and the frosting is absorbed.
- Cut the cake into square pieces and serve chilled. Enjoy!
