Ingredients
2 cups of grated carrot
1 cup vegetable oil
3 eggs
2 cups of sugar
2 cups of wheat flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of cinnamon powder
1/2 teaspoon cardamom powder
1/2 teaspoon salt
200g cream cheese
1/4 cup softened butter
2 cups of powdered sugar
1 teaspoon vanilla extract
Chopped walnuts or almonds (optional, for decoration)
Directions
- Preheat the oven to 180°C.
Grease and flour a cake pan. - In a large bowl, mix the grated carrot, oil, eggs and sugar.
Stir well until you obtain a homogeneous mixture. - In another bowl, sift the wheat flour, baking powder, baking soda, cinnamon powder, cardamom powder and salt.
Add this mixture to the liquid ingredients and stir until well combined. - Pour the batter into the prepared pan and bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the frosting.
In a bowl, beat the cream cheese, butter, icing sugar and vanilla until light and fluffy. - After removing the cake from the oven and letting it cool completely, spread the frosting over the cake.
- If desired, decorate with chopped walnuts or almonds.
