Ingredients

  • 2 cups of wheat flour

  • 1 1/2 teaspoon baking powder

  • 1/2 teaspoon bicarbonate of soda

  • 1/2 teaspoon of salt

  • 1 cup of sugar

  • 2 eggs

  • 1/2 cup lemon juice (about 3 lemons)

  • Zest of 2 lemons

  • 1/2 cup of milk

  • 1/2 cup melted butter

Directions

  • Preheat the oven to 180°C. 
    Unite a form of cake with butter and wheat flour.
  • In a large bowl, sift the flour, baking powder, baking soda and salt. 
    Mix well and book.
  • In another bowl, beat the sugar and eggs until the mixture is light and fluffy.
  • Add the lemon juice, lemon zest, milk and melted butter to the egg-sugar mixture. 
    Mix well.
  • Gradually add the dry ingredient mixture to the liquid mixture, stirring gently until all ingredients are incorporated.
  • Pour the batter into the prepared cake pan and level the surface with a spatula.
  • Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool for a few minutes in the pan. 
    Then unmold and cool completely on a wire rack.
  • Optionally, you can prepare a lemon icing for the cake. 
    Just mix fresh lemon juice with icing sugar until you get a frosting consistency. 
    Pour over cooled cake and garnish with lemon zest.
