Ingredients

  • 2 cups of wheat flour

  • 1 teaspoon of baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup butter (at room temperature)

  • 1 and 1/2 cup sugar

  • 3 eggs

  • Juice and zest of 2 lemons

  • 1 cup of natural yogurt

  • 1/2 cup confectioners’ sugar

  • 1 lemon juice

Directions

  • Preheat the oven to 180°C and grease a cake tin with butter and flour.
  • In a large bowl, sift together the flour, baking powder, baking soda and salt. 
    Mix well and set aside.
  • In another bowl, beat the butter and sugar until you obtain a creamy mixture.
  • Add the eggs, one at a time, beating well after each addition.
  • Add the lemon juice and zest to the mixture and mix until combined.
  • Gradually add the flour mixture to the butter mixture, alternating with the yogurt. 
    Start and end with the flour mixture, mixing just until all ingredients are well incorporated.
  • Pour the batter into the prepared pan and bake in the preheated oven for approximately 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • While the cake is baking, prepare the lemon frosting. 
    In a bowl, mix the icing sugar with the lemon juice until you get a homogeneous coating.
  • Once the cake is baked, remove it from the oven and let it cool for a few minutes in the pan. 
    Then, turn out the cake onto a serving plate.
  • Drizzle the cake with lemon icing while it is still warm. 
    Bake with a second layer of topping if desired.
  • Let the cake cool completely before cutting and serving.
