Ingredients
500g grated raw cassava
3 eggs
1 cup of sugar
1 cup coconut milk
1/2 cup of milk
1/4 cup melted butter
1 teaspoon vanilla essence
1/2 cup shredded cheese (optional)
1 tablespoon powdered yeast
Grated coconut for sprinkling (optional)
Directions
- Preheat the oven to 180°C and grease a cake tin with butter and flour.
- In a large bowl, mix the grated cassava, eggs and sugar.
Stir well until you get a homogeneous mass. - Add the coconut milk, milk, melted butter and vanilla essence to the dough.
Mix well. - If desired, add grated cheese to the dough and mix again.
- Lastly, add the baking powder and stir gently until incorporated into the dough.
- Pour the batter into the prepared cake pan, spreading it out evenly.
- Place in the preheated oven and bake for approximately 40 to 45 minutes, or until the cake is golden brown and firm.
Do the toothpick test: insert a toothpick in the center of the cake, if it comes out clean, it’s done. - Remove the cake from the oven and let it cool completely before unmolding.
- If desired, sprinkle grated coconut over the cake to decorate.
