Ingredients

  • 500g grated raw cassava

  • 3 eggs

  • 1 cup of sugar

  • 1 cup coconut milk

  • 1/2 cup of milk

  • 1/4 cup melted butter

  • 1 teaspoon vanilla essence

  • 1/2 cup shredded cheese (optional)

  • 1 tablespoon powdered yeast

  • Grated coconut for sprinkling (optional)

Directions

  • Preheat the oven to 180°C and grease a cake tin with butter and flour.
  • In a large bowl, mix the grated cassava, eggs and sugar. 
    Stir well until you get a homogeneous mass.
  • Add the coconut milk, milk, melted butter and vanilla essence to the dough. 
    Mix well.
  • If desired, add grated cheese to the dough and mix again.
  • Lastly, add the baking powder and stir gently until incorporated into the dough.
  • Pour the batter into the prepared cake pan, spreading it out evenly.
  • Place in the preheated oven and bake for approximately 40 to 45 minutes, or until the cake is golden brown and firm. 
    Do the toothpick test: insert a toothpick in the center of the cake, if it comes out clean, it’s done.
  • Remove the cake from the oven and let it cool completely before unmolding.
  • If desired, sprinkle grated coconut over the cake to decorate.
