2 boiled eggs
1 cup vegetable oil
1 tablespoon mustard
1 tablespoon vinegar or lemon juice
Salt to taste
Black pepper to taste (optional)
Directions
- Peel the boiled eggs and cut them into small pieces.
- In a blender or food processor, place the boiled eggs, mustard, vinegar or lemon juice, salt and black pepper (if using).
- Start beating on low speed and slowly add the vegetable oil in a thin stream while the blender or processor is running.
- Continue beating until you get a creamy and homogeneous mixture. If necessary, add more salt or vinegar/lemon juice according to your taste.
- Transfer the mayonnaise to a container and refrigerate for at least 30 minutes before serving.
