Ingredients

  • 2 boiled eggs

  • 1 cup vegetable oil

  • 1 tablespoon mustard

  • 1 tablespoon vinegar or lemon juice

  • Salt to taste

  • Black pepper to taste (optional)

Directions

  • Peel the boiled eggs and cut them into small pieces.
  • In a blender or food processor, place the boiled eggs, mustard, vinegar or lemon juice, salt and black pepper (if using).
  • Start beating on low speed and slowly add the vegetable oil in a thin stream while the blender or processor is running.
  • Continue beating until you get a creamy and homogeneous mixture. If necessary, add more salt or vinegar/lemon juice according to your taste.
  • Transfer the mayonnaise to a container and refrigerate for at least 30 minutes before serving.
