Ingredients

  • 1 cup of cold milk

  • 1 cup vegetable oil (can be sunflower, canola or corn oil)

  • 1 small clove of garlic (optional, for flavor)

  • 1 teaspoon Dijon mustard

  • Juice of half a lemon

  • Salt to taste

Directions

  • Place the milk in a blender and add the garlic (if using).
  • Turn the blender on low speed and add the oil in a steady stream. 
    Continue beating until the mixture begins to thicken.
  • When the mixture reaches a thicker consistency, add the mustard, lemon juice and salt. 
    Continue beating until you obtain a creamy and homogeneous texture.
  • Taste and adjust seasoning as needed, adding more salt, mustard or lemon to suit your personal taste.
  • Transfer the milk mayonnaise to a container and refrigerate for at least 30 minutes before serving. 
    This helps to firm up the texture even more and intensify the flavors.
