Ingredients
1 cup of rolled oats
1 cup milk (can be plant-based milk for a vegan version)
1 cup all-purpose flour (or oat flour for a gluten-free version)
1/2 cup vegetable oil
1/2 cup sugar (can be replaced with honey, maple syrup, or other sweetener of your choice)
2 eggs (or egg substitute for a vegan version)
1 teaspoon of baking powder
1 teaspoon vanilla essence (optional)
1/2 teaspoon salt
Dried fruit, nuts or chocolate chips (optional, to add to taste)
Directions
- Preheat the oven to 180°C.Â
Grease a cake pan or line with baking paper. - In a bowl, mix the oats and milk.Â
Let it sit for about 10 minutes so the oats absorb the liquid. - In another bowl, mix the flour, baking powder and salt.
- Add the oil, sugar, eggs (or egg substitute) and vanilla essence to the oat and milk mixture.Â
Shake well. - Gradually add the dry ingredient mixture to the liquid mixture, stirring until you obtain a homogeneous dough.
- If desired, add dried fruits, nuts or chocolate chips to the dough and mix.
- Pour the batter into the prepared pan.
- Bake in the preheated oven for about 30-40 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool before slicing and serving.
