Ingredients
3 cups grated coconut (fresh or dehydrated)
2 cups of sugar
1 cup of water
1 tablespoon of butter
3 eggs
1 pinch of salt
Directions
- Preheat the oven to 180°C.
- In a pan, mix the sugar, water and butter.
Place over medium heat, stirring until the sugar dissolves. - Add the grated coconut to the mixture in the pan and cook over medium heat until the mixture begins to thicken.
- Meanwhile, separate the egg yolks from the egg whites.
Set the egg whites aside and add the yolks to the coconut mixture, mixing well. - Continue cooking the mixture until it reaches a creamy consistency.
Make sure to stir constantly to prevent it from sticking to the bottom of the pan. - Beat the egg whites with a pinch of salt.
When the coconut mixture is ready, remove from the heat and gently fold in the egg whites. - Transfer the mixture to a greased baking tray and bake in the preheated oven for approximately 20-25 minutes, or until the top is golden.
- Remove from the oven and let cool completely before cutting into pieces.
