Ingredients

  • 3 eggs

  • 1 cup of sugar

  • 1/2 cup vegetable oil

  • 1 cup concentrated passion fruit juice (about 4 passion fruits)

  • 2 cups of wheat flour

  • 1 tablespoon baking powder

  • Passion fruit pulp to decorate (optional)

Directions

  • Preheat the oven to 180°C. 
    Grease and flour a cake pan.
  • In a large bowl, beat the eggs and sugar until light and fluffy.
  • Add the vegetable oil and concentrated passion fruit juice to the egg and sugar mixture, mixing well until completely incorporated.
  • Gradually add the flour to the wet mixture, stirring until the dough is smooth.
  • Lastly, add the baking powder and mix gently until it is well incorporated into the dough.
  • Pour the batter into the prepared pan and bake in the preheated oven for approximately 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool completely before unmolding.
  • If desired, decorate the cake with passion fruit pulp on top before serving.
