Ingredients
300g pasta (can be penne, screw, or whatever you prefer)
2 tablespoons of butter
2 tablespoons of wheat flour
2 cups of milk
2 cups grated cheddar cheese
1 cup grated mozzarella cheese
Salt and pepper to taste
1/2 cup grated Parmesan cheese (optional, for gratin)
Breadcrumbs (optional, for gratin)
Directions
- Cook the pasta in salted water according to package instructions until al dente. Drain and reserve.
- While the pasta is cooking, in a large saucepan, melt the butter over medium heat. Add the wheat flour and stir well to form a roux (a mixture of fat and flour).
- Gradually pour the milk into the pan, stirring constantly to prevent lumps from forming. Continue stirring until the mixture begins to thicken.
- Reduce the heat to low and add the grated cheddar and mozzarella cheeses to the milk mixture and stir until the cheese is completely melted and the sauce is smooth. Season with salt and pepper to taste.
- Add the cooked pasta to the cheese sauce and stir well to ensure the pasta is completely covered in the sauce.
- If desired, transfer the macaroni and cheese to a baking dish or oven dish. Sprinkle grated Parmesan cheese and/or breadcrumbs on top to coat.
- Place in the preheated oven at 180°C for around 15 minutes, or until the cheese is bubbly and browned.
- Remove from the oven and let it rest for a few minutes before serving.
