Ingredients

  • 3 cups of wheat flour

  • 200g cold butter, cut into cubes

  • 1 egg

  • 1/2 cup ice water

  • 1 teaspoon of salt

  • 500g cooked and shredded chicken breast

  • 1 chopped onion

  • 2 cloves of garlic, chopped

  • 1 grated carrot

  • 1 cup of peas

  • 1/2 cup corn

  • 1/2 cup chopped green olives

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1 cup tomato sauce

  • Parsley and chives to taste

Directions

  • In a bowl, mix the wheat flour and salt.
  • Add the cubed cold butter to the flour mixture and, using your fingertips, work in the butter until it forms a crumb-like texture.
  • Add the egg and ice water. 
    Mix until you obtain a homogeneous mass.
  • Form the dough into a ball, wrap it in plastic wrap and refrigerate for at least 30 minutes.
  • In a pan, heat the olive oil and sauté the onion and garlic until golden.
  • Add the shredded chicken, grated carrot, peas, corn, olives, tomato sauce and mix well.
  • Season with salt, pepper, parsley and chives to taste. 
    Cook for a few minutes until all ingredients are well combined.
  • Preheat the oven to 180°C.
  • Divide the dough into two parts, one slightly larger than the other.
  • Roll out most of the dough with a rolling pin on a floured surface and line the bottom of a casserole dish.
  • Place the filling over the dough in the pan.
  • Open the second part of the dough and cover the filling, sealing the edges well.
  • Make a few slits in the top of the dough to allow steam to escape.
  • Bake in the preheated oven for approximately 30-40 minutes, or until the dough is golden.
