Ingredients
3 cups of wheat flour
200g cold butter, cut into cubes
1 egg
1/2 cup ice water
1 teaspoon of salt
500g cooked and shredded chicken breast
1 chopped onion
2 cloves of garlic, chopped
1 grated carrot
1 cup of peas
1/2 cup corn
1/2 cup chopped green olives
2 tablespoons olive oil
Salt and pepper to taste
1 cup tomato sauce
Parsley and chives to taste
Directions
- In a bowl, mix the wheat flour and salt.
- Add the cubed cold butter to the flour mixture and, using your fingertips, work in the butter until it forms a crumb-like texture.
- Add the egg and ice water.
Mix until you obtain a homogeneous mass. - Form the dough into a ball, wrap it in plastic wrap and refrigerate for at least 30 minutes.
- In a pan, heat the olive oil and sauté the onion and garlic until golden.
- Add the shredded chicken, grated carrot, peas, corn, olives, tomato sauce and mix well.
- Season with salt, pepper, parsley and chives to taste.
Cook for a few minutes until all ingredients are well combined. - Preheat the oven to 180°C.
- Divide the dough into two parts, one slightly larger than the other.
- Roll out most of the dough with a rolling pin on a floured surface and line the bottom of a casserole dish.
- Place the filling over the dough in the pan.
- Open the second part of the dough and cover the filling, sealing the edges well.
- Make a few slits in the top of the dough to allow steam to escape.
- Bake in the preheated oven for approximately 30-40 minutes, or until the dough is golden.
