Ingredients

  • 1 ripe pineapple, peeled and chopped

  • 1 can of condensed milk

  • 1 can of whey-free cream

  • 1 envelope of unflavored gelatin

  • 1/2 cup of water

  • Juice of 1 lemon (optional, to enhance the flavor)

  • Mint leaves for garnish (optional)

Directions

  • Dissolve the unflavored gelatin envelope in 1/2 cup of hot water. 
    Stir well until the gelatin is completely dissolved. 
    Reserve.
  • Peel and chop the pineapple into small pieces.
  • In a blender, blend the pineapple until puree.
  • In a large bowl, combine the pineapple puree, condensed milk, cream and lemon juice (if using). 
    Stir well until you obtain a homogeneous mixture.
  • Add the dissolved gelatin to the mixture and stir again.
  • Pour the mixture into individual glasses or a single mousse container. 
    Refrigerate for at least 4 hours or until the mousse is firm.
  • Before serving, garnish with pineapple slices or mint leaves, if desired.
  • Serve the pineapple mousse cold and enjoy this refreshing delight!
