Ingredients
300 g (2 ¼ cups) all-purpose flour
120 g (⅔ cup) boiled and mashed potato
3 g (⅓ sachet) of dry yeast or 9 g of fresh yeast (⅔ of a 15 g tablet)
6 g (⅓ tablespoon) salt
12 g (1 tablespoon) of sugar
100 to 110 g (1/2 cup) whole milk
2 eggs (one for the dough and one for the topping)
25 g (1 ¾ tablespoon) unsalted butter
180 g (¾ cup) cottage cheese (firmer)
Directions
- In a bowl, add 300 g (2 ¼ cups) of all-purpose flour;
- Add 3 g (⅓ sachet) of dry yeast or 9 g of fresh yeast (⅔ of a 15 g tablet);
- Add 6 g (⅓ tablespoon) of salt;
- Add 12 g (1 tablespoon) of sugar;
- Mix;
- Add 120 g (⅔ cup) of boiled and mashed potato;
- Add 1 egg;
- Add 25 g (1 ¾ tablespoon) of unsalted butter;
- Add 100 to 110 g (1/2 cup) of whole milk;
- Mix well;
- Oil the countertop and hands;
- Knead the dough for 15 minutes;
- Grease a bowl with oil;
- Shape the dough into a ball and place in the bowl to rest for 1 hour;
- Transfer the dough to the countertop;
- Sprinkle a little flour;
- Cut the dough into 12 pieces;
- Model polka dots;
- Cover and let rest for 10 minutes;
- Grease a baking sheet with butter or oil;
- Sprinkle the countertop with flour;
- Place the dough with the smooth side facing down;
- Knead it with your fingertips until it forms a disk;
- Add curd in the middle;
