Ingredients
500g of pasta of your choice (penne, spaghetti, fusilli, etc.)
1 tin of peeled tomatoes
1 medium onion, chopped
2 garlic cloves, minced
1 large carrot, cut into cubes
1 red bell pepper, cut into cubes
200g ground beef (optional)
2 tablespoons of olive oil
4 cups of water or vegetable broth
Salt and pepper to taste
Grated cheese (optional)
Directions
- Heat the pressure cooker over medium heat and add the olive oil.Â
Sauté the onion and garlic until golden. - If using ground beef, add it to the pan and sauté until cooked through and browned.
- Add the carrots and red bell pepper to the pan and saute for a few minutes, until the vegetables are slightly soft.
- Add the peeled tomato with the liquid and mash it with a wooden spoon to break it up a bit.Â
Season with salt and pepper to taste. - Place the noodles in the pressure cooker and pour the water or vegetable stock over the top, making sure the noodles are completely covered by the liquid.
- Close the pressure cooker according to the manufacturer’s instructions and cook over medium-high heat.Â
As soon as the pan starts to whistle, lower the heat to medium-low and cook for about 5 to 6 minutes. - Turn off the heat and let the pressure release naturally from the pan before opening.Â
Be careful opening the pot as the steam will be hot. - Mix the cooked pasta well and serve hot.Â
If desired, sprinkle grated cheese on top before serving.
