Ingredients
1 medium pumpkin (approximately 1.5 kg), peeled and cut into cubes
1 medium onion, chopped
2 garlic cloves, chopped
4 cups vegetable broth or water
1/2 teaspoon ground ginger (optional)
1/4 teaspoon nutmeg (optional)
Salt and pepper to taste
2 tablespoons olive oil
Sour cream or coconut milk to serve (optional)
Roasted pumpkin seeds for garnish (optional)
Directions
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and transparent, about 5 minutes. Add the chopped garlic and sauté for another 1 minute.
- Add the pumpkin cubes to the pan and season with salt, pepper, ground ginger and nutmeg (if using). Sauté for a few minutes, stirring occasionally.
- Pour the vegetable broth or water over the pumpkin in the pan. Bring to a boil, reduce heat to medium-low and simmer for about 20-25 minutes, or until pumpkin is tender.
- Remove the pan from the heat and use a hand blender or conventional blender to puree the soup until smooth. If using a conventional blender, work in batches to avoid overflows.
- After pureeing the soup, return it to the pan over low heat to heat. Check seasoning and adjust as needed.
- Serve the pumpkin broth hot, with a spoonful of cream or coconut milk on top, if desired. You can also garnish with toasted pumpkin seeds for an extra touch of flavor and texture.
