Ingredients

  • 2 cups of grated coconut

  • 2 cups of sugar

  • 1/2 cup grated parmesan cheese

  • 3 eggs

  • 1/4 cup melted butter

  • 1/2 cup of milk

  • 1 teaspoon vanilla essence (optional)

  • Paper muffin cups or silicone molds

Directions

  • Preheat the oven to 180°C and line the muffin cups with paper or use silicone molds.
  • In a large bowl, combine the grated coconut, sugar and Parmesan cheese.
  • In another bowl, beat the eggs. 
    Add the melted butter, milk and vanilla essence (if using) to the beaten eggs and mix well.
  • Pour the liquid mixture over the coconut, sugar and cheese mixture. 
    Stir well to combine all ingredients.
  • Fill each muffin cup with the cheesecake mixture until about 3/4 of the way full.
  • Bake in the preheated oven for around 20-25 minutes, or until the queijadinhas are golden and firm to the touch.
  • Remove the cheesecakes from the oven and let them cool before serving.
