Ingredients
1 cup of kibbeh wheat
500g ground meat (can be beef, lamb or a mixture of both)
1 medium onion, chopped
2 cloves of minced garlic
1/4 cup chopped fresh mint
1 teaspoon ground cumin
1 teaspoon ground cinnamon
Salt to taste
Black pepper to taste
Olive oil
Mint leaves for garnish (optional)
Directions
- Place the wheat in a bowl and cover with warm water.
- Soak for about 30 minutes or until the wheat is soft.
- Drain the wheat well using a sieve to remove excess water.
- Preheat the oven to 180°C.
- In a frying pan, heat some olive oil over medium heat.
- Sauté the onion and garlic until soft and lightly golden.
- Add the ground beef to the skillet and cook until cooked through.
- Season the meat with salt, pepper, cumin and cinnamon. Mix well.
- Add the chopped mint and cook for a few more minutes. Set aside.
- In a large bowl, mix the drained wheat with the seasoned meat.
- Mix well until all ingredients are combined.
- Grease a baking tray with a little olive oil.
- Spread half of the kibbeh mixture onto the baking sheet and press down with your hands to form an even layer.
- Distribute the meat filling evenly over the kibbeh layer.
- Cover the filling with the remaining kibbeh mixture, pressing down again to form another even layer.
- Cut the surface into diamonds or squares with a sharp knife.
- Drizzle a little olive oil over the top of the kibbeh.
- Bake in the preheated oven for about 30-40 minutes, or until the kibbeh is golden on top.
- Remove from the oven and let cool slightly before cutting.
- Serve hot, accompanied by green salad and lemon.
- Garnish with mint leaves if desired.
