  • Olive oil

  • Mint leaves for garnish (optional)

Directions

  • Place the wheat in a bowl and cover with warm water.
  • Soak for about 30 minutes or until the wheat is soft.
  • Drain the wheat well using a sieve to remove excess water.
  • Preheat the oven to 180°C.
  • In a frying pan, heat some olive oil over medium heat.
  • Sauté the onion and garlic until soft and lightly golden.
  • Add the ground beef to the skillet and cook until cooked through.
  • Season the meat with salt, pepper, cumin and cinnamon. Mix well.
  • Add the chopped mint and cook for a few more minutes. Set aside.
  • In a large bowl, mix the drained wheat with the seasoned meat.
  • Mix well until all ingredients are combined.
  • Grease a baking tray with a little olive oil.
  • Spread half of the kibbeh mixture onto the baking sheet and press down with your hands to form an even layer.
  • Distribute the meat filling evenly over the kibbeh layer.
  • Cover the filling with the remaining kibbeh mixture, pressing down again to form another even layer.
  • Cut the surface into diamonds or squares with a sharp knife.
  • Drizzle a little olive oil over the top of the kibbeh.
  • Bake in the preheated oven for about 30-40 minutes, or until the kibbeh is golden on top.
