Ingredients
3 medium carrots (about 300g), peeled and cut into pieces
3 eggs
1 cup vegetable oil
2 cups of sugar
2 cups of wheat flour
1 tablespoon baking powder
3 tablespoons of chocolate powder
1 tablespoon of butter
6 tablespoons of sugar
3 tablespoons of milk
Directions
- Preheat the oven to 180°C. Grease and flour a medium cake pan.
- In a blender, beat the carrots, eggs and oil until you obtain a homogeneous mixture.
- In a large bowl, mix the sugar and wheat flour. Add the blender mixture and mix well until all ingredients are incorporated.
- Lastly, add the baking powder and mix gently.
- Pour the batter into the prepared pan and bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cake is baking, prepare the frosting: in a pan, mix the chocolate powder, butter, sugar and milk. Cook over medium heat, stirring constantly, until the mixture starts to boil and thickens a little.
- When the cake is baked, remove it from the oven and let it cool for a few minutes. Unmold the cake and cover with the icing while it is still hot.
