To prepare your simple and fluffy carrot cake, you will need to use the ingredients below and follow the step-by-step instructions.

Ingredients

  • 3 medium carrots (about 300g), peeled and cut into pieces

  • 3 eggs

  • 1 cup vegetable oil

  • 2 cups of sugar

  • 2 cups of wheat flour

  • 1 tablespoon baking powder

  • 3 tablespoons of chocolate powder

  • 1 tablespoon of butter

  • 6 tablespoons of sugar

  • 3 tablespoons of milk

Directions

  • Preheat the oven to 180°C. Grease and flour a medium cake pan.
  • In a blender, beat the carrots, eggs and oil until you obtain a homogeneous mixture.
  • In a large bowl, mix the sugar and wheat flour. Add the blender mixture and mix well until all ingredients are incorporated.
  • Lastly, add the baking powder and mix gently.
  • Pour the batter into the prepared pan and bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • While the cake is baking, prepare the frosting: in a pan, mix the chocolate powder, butter, sugar and milk. Cook over medium heat, stirring constantly, until the mixture starts to boil and thickens a little.
  • When the cake is baked, remove it from the oven and let it cool for a few minutes. Unmold the cake and cover with the icing while it is still hot.
  • Serve the simple and fluffy carrot cake accompanied by a drink of your choice. Enjoy yourself!
