Ingredients

  • 2 whole eggs

  • 500 grams of hydrated tapioca

  • 1 teaspoon(s) baking powder

  • 1/2 tsp salt (use to taste)

  • 40 grams of grated parmesan cheese

  • 40 ml of olive oil

  • 400 ml of water

  • Salt to taste

Directions

  • Spread the hydrated tapioca on a baking sheet and bake for 10 minutes in a preheated oven at 180º₢. 
    Break the tapioca, transfer to a bowl and set aside.
  • Add the eggs, olive oil, salt, water to the blender and beat for 1 minute with the device covered.
  • Transfer the liquid mixture to the bowl with the tapioca, add the grated cheese and mix well.
  • Add the baking powder (optional), mix again and transfer the dough to a greased and sprinkled shape.
  • Bake the cake in a preheated oven at 180º₢ for approximately 45 minutes, wait for it to cool after taking it out of the oven and the tapioca cake is ready.
