Ingredients
2 cups granulated tapioca
1 cup coconut milk
1 cup of milk
1 cup of sugar
1/2 cup shredded coconut (optional)
3 eggs
1 teaspoon vanilla essence
1 tablespoon melted butter
1 tablespoon powdered yeast
Directions
- In a large bowl, place the granulated tapioca, coconut milk and milk.Â
Mix well and let it rest for about 30 minutes, until the tapioca absorbs the liquid and becomes soft. - Preheat the oven to 180°C and grease a cake tin with butter and flour.
- In another bowl, beat the eggs with the sugar until you get a fluffy and homogeneous mixture.
- Add the melted butter and vanilla essence to the egg and sugar mixture.Â
Mix well. - Add the hydrated tapioca and grated coconut to the egg mixture.Â
Mix until all ingredients are well incorporated. - Lastly, add the baking powder and mix gently.
- Pour the batter into the prepared cake tin and place in the preheated oven.
- Bake for approximately 40-45 minutes, or until the cake is golden brown and firm to the touch.
- Remove the cake from the oven and let it cool completely before unmolding.
- Serve the tapioca cake in slices and enjoy!
