Ingredients
2 cooked and shredded chicken breasts
1 can of green corn (or frozen, cooked corn)
1 can of peas (or frozen peas, cooked)
1 grated carrot
1 green apple chopped into cubes
1 cup raisins (optional)
1 cup mayonnaise
1/2 cup of cream
1 tablespoon mustard
1 lemon juice
Salt and pepper to taste
Straw potato (to decorate)
Directions
- In a large bowl, mix the shredded chicken, corn, peas, grated carrot, chopped apple and raisins (if using).
- In another bowl, make the sauce by mixing the mayonnaise, cream, mustard, lemon juice, salt and pepper.
Stir well until you obtain a homogeneous mixture. - Pour the dressing over the ingredients in the large bowl and mix gently until all the ingredients are well incorporated.
- Taste and adjust seasoning as needed.
- Refrigerate for at least 30 minutes before serving to let the flavors blend.
- When serving, decorate with straw potatoes on top.
