Ingredients
2 and 1/2 cup of beans (500g)
300g bacon
1 calabrese sausage (300g)
400g of dry/backed beef
2 garlic cloves
1 large onion (200g)
½ cups of cassava flour
salt to taste or 1 beef stock
1 medium tomato (120g)
1 large pepper (120g)
7 teacups of water (1l and 680ml)
Cilantro and chives to taste
Directions
- In a pressure cooker, add 2 and 1/2 cups of bean tea (500g);
- Add 7 cups of water tea (1l and 680ml) until you pass 4 fingers of the beans;
- Add salt to taste or 1 beef stock;
- Cover and take to high fire (leave for 10 minutes after getting pressure);
- In a pan over medium heat, add 1 tablespoon of olive oil/oil;
- Add 300g of bacon;
- Mix and let it fry a little;
- Reserve the fried bacon;
- Add 400g of sertão/dried meat to the pan and fry in the bacon fat;
- Reserve the jerky;
- Add 1 calabrese sausage (300g) cut into slices in the pan and fry;
- Reserve the fried sausage;
- Add 1 large onion (200g) sliced to the pan;
- Fry mixing and scraping the bottom of the pan;
- Add 2 crushed garlic cloves and let it fry a little;
- Add 1 large bell pepper (120g) chopped and let it sauté a little;
- Place on low heat and add the drained beans;
- Add the meats;
- Add cilantro and chives;
- Add 1 medium tomato (120g) sliced;
- Add ½ cups of cassava flour (slowly while mixing);
- Your tropeiro beans are ready!
