Ingredients
2 cups of wheat flour
1/2 cup cold butter, cut into cubes
1/4 cup ice water
A bit of salt
2 medium zucchini, cut into cubes
1 large carrot, grated
1 red pepper, chopped
1 medium onion, chopped
2 garlic cloves, chopped
1 cup broccoli, cut into small florets
1 cup cheese (mozzarella, cheddar or other cheese of your choice), grated
4 eggs
1 cup of milk
Salt and pepper to taste
A handful of fresh parsley, chopped (optional)
Directions
- In a large bowl, mix the wheat flour and salt.
- Add the cold butter and mix until it forms a crumb-like texture.
- Add the ice water little by little, mixing until it forms a homogeneous dough.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 180°C.
- In a frying pan, sauté the onion and garlic until they are golden.
- Add the vegetables (zucchini, carrots, peppers, broccoli) and cook until they are tender but still crunchy.
- Season with salt and pepper to taste.
Add the parsley, if using. - Roll out the dough on a floured surface and line the bottom of a pie dish.
- Spread the sautéed vegetables over the dough.
- Sprinkle the grated cheese over the vegetables.
- In a separate bowl, beat the eggs and mix with the milk.
Pour this mixture over the vegetables and cheese. - Bake the pie in the preheated oven for approximately 30-40 minutes, or until the pastry is golden and the filling is firm.
- Remove from the oven and let cool slightly before slicing.
