This Italian-American favorite combines the sharpness of tomato sauce, the smoothness of heavy cream, and the subtle kick of vodka to create a comforting, restaurant-worthy dish you can make at home. Whether you’re cooking for date night or craving something luxurious, this pasta will never disappoint.

Ingredients

  • 12 oz (340g) penne pasta

  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • ½ cup vodka

  • 1 can (14 oz/400g) crushed tomatoes

  • ¾ cup heavy cream

  • ½ tsp red pepper flakes (optional, for heat)

  • Salt and black pepper to taste

  • ½ cup grated Parmesan cheese

  • Fresh basil leaves, for garnish

Directions

  • Bring a large pot of salted water to a boil.
  • Cook the penne until al dente according to package instructions.
  • Reserve ½ cup of pasta water, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add the chopped onion and sauté until translucent, about 4 minutes.
  • Add the minced garlic and cook for another 30 seconds.
  • Pour in the vodka and let it simmer for 2–3 minutes, allowing the alcohol to cook off.
  • Stir in crushed tomatoes and simmer for 10 minutes.
  • Add heavy cream, red pepper flakes, salt, and pepper.
  • Simmer for another 3–5 minutes until the sauce thickens.
  • Add the cooked pasta to the sauce.
  • Toss to coat, adding reserved pasta water as needed for consistency.
  • Stir in grated Parmesan cheese until creamy and smooth.
  • Garnish with fresh basil leaves and extra Parmesan.
  • Serve immediately and enjoy with a glass of chilled white wine.
