Ingredients
12 oz (340g) penne pasta
2 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
½ cup vodka
1 can (14 oz/400g) crushed tomatoes
¾ cup heavy cream
½ tsp red pepper flakes (optional, for heat)
Salt and black pepper to taste
½ cup grated Parmesan cheese
Fresh basil leaves, for garnish
Directions
- Bring a large pot of salted water to a boil.
- Cook the penne until al dente according to package instructions.
- Reserve ½ cup of pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 4 minutes.
- Add the minced garlic and cook for another 30 seconds.
- Pour in the vodka and let it simmer for 2–3 minutes, allowing the alcohol to cook off.
- Stir in crushed tomatoes and simmer for 10 minutes.
- Add heavy cream, red pepper flakes, salt, and pepper.
- Simmer for another 3–5 minutes until the sauce thickens.
- Add the cooked pasta to the sauce.
- Toss to coat, adding reserved pasta water as needed for consistency.
- Stir in grated Parmesan cheese until creamy and smooth.
- Garnish with fresh basil leaves and extra Parmesan.
- Serve immediately and enjoy with a glass of chilled white wine.
