Ingredients

  • 3 chive leaves

  • 3 large yams

  • 1 tablespoon butter or margarine

  • Salt to taste

Directions

  • Peel and cut the yams into slices, transfer them to a pan and add water until completely covered.
  • Cook the yams until soft, wait for them to cool and transfer them to a blender.
  • Add some of the yam cooking water, cover the blender and beat for 1 minute.
  • Add the chive leaves to the blender and blend for approximately 30 seconds to grind.
  • In a pan melt the butter or margarine, add the beaten yams, salt to taste and cook for a few minutes stirring constantly.
  • Turn off the heat when the yam puree with chives has the consistency you prefer and the recipe is ready.
