Ingredients
3 chive leaves
3 large yams
1 tablespoon butter or margarine
Salt to taste
Directions
- Peel and cut the yams into slices, transfer them to a pan and add water until completely covered.
- Cook the yams until soft, wait for them to cool and transfer them to a blender.
- Add some of the yam cooking water, cover the blender and beat for 1 minute.
- Add the chive leaves to the blender and blend for approximately 30 seconds to grind.
- In a pan melt the butter or margarine, add the beaten yams, salt to taste and cook for a few minutes stirring constantly.
- Turn off the heat when the yam puree with chives has the consistency you prefer and the recipe is ready.
