Ingredients
2 medium zucchinis
1 medium onion chopped
2 cloves of garlic, chopped
3 eggs
1 cup of wheat flour
1/2 cup of milk
1/4 cup olive oil
1 teaspoon of baking powder
Salt and pepper to taste
Grated cheese to taste (optional)
Directions
- Preheat the oven to 180°C and grease a pie dish with a little olive oil or butter.
- Wash the zucchini well and cut them into thin slices.
- In a frying pan, heat some olive oil and sauté the onion and garlic until golden.
- Add the zucchini slices to the pan and cook for about 5-7 minutes, until they are soft. Season with salt and pepper to taste.
- In a large bowl, beat the eggs. Add the milk, olive oil and wheat flour. Mix well until you obtain a homogeneous dough.
- Add the baking powder to the dough and mix gently.
- Add the sautéed zucchini to the dough and mix well.
- Pour the mixture into the greased pie pan and level the surface with a spatula.
- If desired, sprinkle grated cheese over the top of the pie.
- Place in the preheated oven and bake for approximately 30-40 minutes, or until the pie is golden and firm to the touch.
- Remove from the oven and let cool for a few minutes before cutting into slices and serving.
