Ingredients
1 bunch of coriander
1 bunch of parsley
2 garlic cloves
1 small onion
1 lemon juice
1/4 cup olive oil
Salt to taste
Pepper to taste (optional)
Directions
- Wash the coriander and parsley well and remove the thickest stems.
- Peel the garlic cloves and onion.
- In a blender or food processor, place the coriander, parsley, garlic and onion cut into small pieces.
- Add lemon juice, olive oil, salt, and pepper, if using.
- Beat all ingredients until you obtain a homogeneous mixture of the desired consistency. If necessary, add a little more olive oil to achieve the desired texture.
- Taste and adjust the seasoning as preferred, adding more salt, lemon or pepper if necessary.
- Transfer the green sauce to a container and serve as an accompaniment to meat, fish, salads or snacks.
- Store any unused sauce in an airtight container in the refrigerator for up to a week.
