Ingredients

  • 2 anchovy fillets (or 1 tsp anchovy paste)

  • 1 clove garlic (minced or grated)

  • 1 large egg yolk (or 2 tablespoons mayonnaise as a substitute)

  • 2 teaspoons Dijon mustard

  • 2 tablespoons freshly squeezed lemon juice

  • 1/3 cup olive oil (preferably extra virgin)

  • 1/4 cup freshly grated Parmesan cheese

  • 1/2 teaspoon Worcestershire sauce

  • Salt and freshly ground black pepper to taste

Directions

  • In a medium bowl, mash the anchovy fillets into a paste using a fork. Add the minced garlic and combine until smooth.
  • Add the egg yolk, Dijon mustard, and lemon juice to the bowl. Whisk vigorously until the mixture is creamy and well combined.
  • Gradually drizzle in the olive oil while continuously whisking. This step is crucial for creating a smooth emulsion. If the dressing becomes too thick, add a teaspoon of water to adjust the consistency.
  • Stir in the Parmesan cheese and Worcestershire sauce. Season with salt and freshly ground black pepper to taste. Adjust flavors if necessary (e.g., more lemon juice for tanginess or more Parmesan for richness).
  • Let the dressing sit for at least 10 minutes to allow the flavors to meld. Serve over crisp romaine lettuce with croutons, and garnish with additional Parmesan cheese if desired.
