Ingredients
1 cup couscous
1 cup boiling water or vegetable broth
1 tablespoon olive oil
½ teaspoon salt
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red bell pepper, diced
¼ cup red onion, finely chopped
¼ cup Kalamata olives, sliced
¼ cup feta cheese, crumbled (optional)
2 tablespoons fresh parsley, chopped
2 tablespoons fresh mint, chopped
3 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon red wine vinegar
1 clove garlic, minced
½ teaspoon Dijon mustard
Salt and pepper to taste
Directions
- In a large bowl, combine the couscous, boiling water (or broth), olive oil, and salt.
- Cover the bowl with a lid or plastic wrap and let it sit for 5 minutes.
- Fluff the couscous with a fork to separate the grains.
- In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, Dijon mustard, salt, and pepper until well combined.
- Add the cherry tomatoes, cucumber, red bell pepper, red onion, olives, feta cheese (if using), parsley, and mint to the couscous.
- Pour the dressing over the salad and toss gently to combine.
- Let the salad sit for 5–10 minutes to allow the flavors to meld.
