½ cup semolina (sooji)
¼ cup ghee
½ cup sugar
1¼ cups water
¼ tsp cardamom powder
2 tbsp chopped nuts (almonds, cashews, or pistachios)
Optional: raisins or saffron strands
Directions
- Heat ghee in a pan over medium heat.
- Add semolina and roast, stirring continuously, until fragrant and lightly golden.
- Carefully add water and stir quickly to avoid lumps.
- Cook until the mixture thickens and the semolina absorbs the liquid.
- Add sugar and cardamom powder; mix well.
- Cook for a few more minutes until the halwa leaves the sides of the pan.
- Garnish with nuts (and raisins if using). Serve warm.
