Ingredients
2 cups heavy cream
1 cup whole milk
¾ cup granulated sugar
½ cup unsweetened cocoa powder
4 oz semi-sweet chocolate (chopped)
4 egg yolks
1 teaspoon vanilla extract
Pinch of salt
Directions
- In a saucepan over medium heat, whisk together milk, cream, cocoa powder, and half of the sugar. Heat until warm but not boiling.
- Add the chopped chocolate and stir until completely melted and smooth.
- In a separate bowl, whisk egg yolks with the remaining sugar until pale and slightly thickened.
- Slowly pour a small amount of the warm chocolate mixture into the yolks while whisking constantly. Then pour the egg mixture back into the saucepan.
- Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5–7 minutes). Do not boil.
- Remove from heat. Stir in vanilla extract and salt. Strain for extra smoothness if desired.
- Cover and refrigerate for at least 2 hours until completely cold.
- Pour into an ice cream maker and churn according to manufacturer instructions.
- Transfer to a container and freeze for 2–4 hours until firm.
