Silky, decadent, and intensely chocolaty, chocolate ice cream delivers a cool burst of sweetness with every spoonful. Its smooth texture and bold cocoa aroma make it a classic comfort dessert, perfect on its own or paired with brownies, fruit, or whipped cream.

Ingredients

  • 2 cups heavy cream

  • 1 cup whole milk

  • ¾ cup granulated sugar

  • ½ cup unsweetened cocoa powder

  • 4 oz semi-sweet chocolate (chopped)

  • 4 egg yolks

  • 1 teaspoon vanilla extract

  • Pinch of salt

Directions

  • In a saucepan over medium heat, whisk together milk, cream, cocoa powder, and half of the sugar. Heat until warm but not boiling.
  • Add the chopped chocolate and stir until completely melted and smooth.
  • In a separate bowl, whisk egg yolks with the remaining sugar until pale and slightly thickened.
  • Slowly pour a small amount of the warm chocolate mixture into the yolks while whisking constantly. Then pour the egg mixture back into the saucepan.
  • Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5–7 minutes). Do not boil.
  • Remove from heat. Stir in vanilla extract and salt. Strain for extra smoothness if desired.
  • Cover and refrigerate for at least 2 hours until completely cold.
  • Pour into an ice cream maker and churn according to manufacturer instructions.
  • Transfer to a container and freeze for 2–4 hours until firm.
