This vegetable pasta makes for a simple, nutritious, and delicious meal.

Ingredients

  • 500 grams of pasta of your choice

  • 2 tablespoons soy sauce (30 ml)

  • 1/2 cup water (120 ml)

  • 1 tablespoon olive oil (15 ml)

  • 12 cherry tomatoes (160 grams)

  • 1/4 cauliflower (150 grams)

  • 2 garlic cloves (7 grams)

  • 1/2 zucchini (160 grams)

  • 1/2 broccoli (80 grams)

  • 1 carrot (80 grams)

  • Black pepper to taste

  • Salt to taste

Directions

  • Cook the pasta in boiling water with a little salt until tender. Drain and set aside.
  • In a pan, add the olive oil and chopped garlic, then sauté over low heat, stirring well.
  • Add the cauliflower and broccoli chopped into small pieces, along with the zucchini and carrot sliced thinly. Mix well.
  • Season with black pepper and salt to taste. Stir well, cover the pan, and let the vegetables steam-cook for a few minutes.
  • Add the water, chopped tomatoes, and soy sauce, then mix well. Cover again and cook for 2 more minutes.
  • Transfer the cooked pasta to a serving dish and spoon the sautéed vegetable sauce over it.
  • Mix well until all the ingredients are evenly combined, and the vegetable pasta is ready to serve.
