Ingredients
4 eggs
1½ cups sugar
600 ml (2½ cups) milk
4 tablespoons cornmeal (fine corn flour)
4 cups fresh corn kernels (about 4 ears of corn)
3 tablespoons grated Parmesan cheese
3 tablespoons butter or margarine
1 teaspoon fennel seeds
1 tablespoon baking powder
Directions
- Add the corn kernels, milk, and eggs to a blender. Blend for about 2 minutes until smooth. Add the butter (or margarine), cornmeal, sugar, and grated Parmesan cheese. Blend for another 30 seconds.
- Add the baking powder and pulse briefly to combine. Add the fennel seeds and blend just enough to mix them into the batter. Pour the batter into a greased baking pan dusted with cornmeal.

- Bake in a preheated oven at 180°C (350°F) for approximately 35–40 minutes, or until the top is golden brown and the cake is lightly firm to the touch.
- Let the cake cool completely before removing it from the pan. Slice as desired and serve. Enjoy your homemade traditional corn cake!
