Discover how easy it is to prepare a delicious homemade traditional corn cake.

Ingredients

  • 4 eggs

  • 1½ cups sugar

  • 600 ml (2½ cups) milk

  • 4 tablespoons cornmeal (fine corn flour)

  • 4 cups fresh corn kernels (about 4 ears of corn)

  • 3 tablespoons grated Parmesan cheese

  • 3 tablespoons butter or margarine

  • 1 teaspoon fennel seeds

  • 1 tablespoon baking powder

Directions

  • Add the corn kernels, milk, and eggs to a blender. Blend for about 2 minutes until smooth. Add the butter (or margarine), cornmeal, sugar, and grated Parmesan cheese. Blend for another 30 seconds.
  • Add the baking powder and pulse briefly to combine. Add the fennel seeds and blend just enough to mix them into the batter. Pour the batter into a greased baking pan dusted with cornmeal.
  • Bake in a preheated oven at 180°C (350°F) for approximately 35–40 minutes, or until the top is golden brown and the cake is lightly firm to the touch.
  • Let the cake cool completely before removing it from the pan. Slice as desired and serve. Enjoy your homemade traditional corn cake!
