Ingredients
300 grams of lentils
400 ml of chicken broth
2 garlic cloves
2 medium potatoes
2 small tomatoes or 1 large
1/2 large or 1 small carrot
1/2 onion
Chopped parsley to taste
Seasonings to taste (paprika, pepper, etc.)
Salt to taste
Grated Parmesan cheese (optional)
Directions
- In a pan, place the washed and drained lentils, 800 ml of water and cover.Â
Place over medium heat and cook for 10 minutes.Â
Chop the potatoes, carrots, onions, tomatoes, garlic and set aside.Â
Turn off the fire when the pea is soft, drain the water and reserve it too. - In a pan put some olive oil or other oil, add the chopped onion and garlic and sauté until translucent without stopping to stir.Â
Add the carrots and chopped potatoes, mix well and season with salt and seasoning to taste.Â
Add the chicken stock and complete with another 400 ml of water.
- Cover and cook the vegetables until soft.Â
Add the lentils and cook for another 10 minutes with the lid on. - Turn off the heat, add chopped parsley to taste and mix well to homogenize.Â
Finish by sprinkling grated Parmesan cheese on top and serve the lentil soup while it’s still hot.
