Light and healthy, the lentil salad has a special flavor and is super easy to prepare!

Ingredients

  • 1 small onion

  • 1 cup olives (tea)

  • 2 cups of lentils (lentils)

  • 2 tomatoes without the seeds

  • 2 small cooked carrots

  • Lemon juice

  • Saffron to taste

  • Oregano to taste

  • Pepper to taste

  • Parsley to taste

  • Olive oil to taste

  • Salt to taste

Directions

  • Put the lentils in a pan, cover with water and bring to a boil. 
    Cook for approximately 15 minutes after the water starts to boil and wait to cool down. 
    Transfer the lentils to a container and add the chopped onion, olives and cooked carrots.
  • Add the diced tomatoes and season with saffron, salt, oregano, chopped parsley, pepper and olive oil to taste. 
    Finish by adding the lemon juice and mix well. 
    Leave the lentil salad in the fridge until it cools down and the recipe is ready to serve.
