Ingredients
600 grams of raw cassava
75 grams melted unsalted butter
4 whole eggs
1 cup (tea) and 1/2 of sugar (270 grams)
1 cup milk (or coconut milk)
1 cup(s) desiccated coconut
1 tablespoon chemical yeast
1 pinch of salt
Directions
- Peel the cassava, cut it into cubes and transfer it to a blender, add the milk or coconut milk, the eggs and beat for 2 minutes.
Add the sugar, grated coconut, salt, melted butter and beat for another 2 minutes.
Place the baking soda and mix until the dough is smooth and uniform. - Transfer the liquid mass to a greased shape with butter or margarine and sprinkled with grated coconut.
Take the cake to bake for approximately 45 to 50 minutes in the preheated oven at 180º₢. - Remove the cake from the oven, wait for it to cool slightly at room temperature and unmold it on a plate or platter still warm.
Cut into pieces the way you prefer and the creamy cassava cake is ready to serve.
