Ingredients
2 cups of sugar
1 cup of water
2 cups desiccated coconut (fresh or desiccated)
1/4 teaspoon of salt
1 teaspoon vanilla essence
Directions
- In a large saucepan, combine the sugar and water and place over medium-high heat, stirring constantly until the sugar is completely dissolved.
- Add the shredded coconut and salt to the sugar and water mixture and continue stirring.Â
Reduce the heat to medium and cook the mixture for about 20-25 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan. - When the mixture is thick and starts to come away from the pan, add the vanilla essence and mix well.
- Pour the mixture into a baking sheet lined with parchment paper and let it cool for about 10-15 minutes.
- After the mixture has cooled, use a sharp knife to cut it into small pieces.Â
Wrap each piece in parchment paper and let cool completely before serving.
