Ingredients
5 tablespoons fine oat bran
4 bananas
2 whole eggs
2 tablespoons cocoa powder 70%
2 tablespoons cornstarch
2 tablespoons coconut oil
1 tablespoon baking powder
50 ml of coconut milk
Directions
- Beat the eggs very well.Â
Add the coconut milk, coconut oil and cocoa powder, mix well and set aside. - Mash the bananas in a bowl, add the egg mixture and mix well.
- Add cornstarch, oat bran, yeast and stir until smooth.
- Transfer the dough to greased cupcake molds, place in a preheated oven at 180º₢ and bake for about 30 minutes.
- Wait for the chocolate cupcakes to cool down before unmoulding them and they are ready for consumption.
