Ingredients

  • 2 cups of flaked corn flour

  • 1 cup of water

  • 1 tablespoon of butter

  • 1 teaspoon of salt

  • 1 medium chopped onion

  • 1 chopped medium tomato

  • 1 chopped small bell pepper

  • 2 minced garlic cloves

  • 2 tablespoons of olive oil

  • 1 tablespoon chopped cilantro (optional)

  • salt to taste

Directions

  • In a large bowl, place the flaked corn flour and add the water little by little, mixing with your hands until you get a wet and grainy consistency. 
    Reserve.
  • In a large pan, heat the oil over medium heat and saute the onion, garlic, tomato and bell pepper until soft.
  • Add the butter and mix until melted. 
    Season with salt and chopped cilantro, if desired.
  • Add the cornflour mixture to the pan and mix well to incorporate the ingredients.
  • Cover the pan and cook over low heat for about 10 minutes, stirring occasionally to prevent sticking to the bottom.
  • Remove the pan from the heat and let it rest for a few minutes.
  • Unmold the couscous into a large plate or mold with a hole in the middle, pressing gently to ensure it is compact.
  • Serve couscous slices accompanied by butter, curd cheese, milk or coffee.
