Ingredients

  • 500g of pasta of your choice (penne, spaghetti, fusilli, etc.)

  • 1 tin of peeled tomatoes

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 1 large carrot, cut into cubes

  • 1 red bell pepper, cut into cubes

  • 200g ground beef (optional)

  • 2 tablespoons of olive oil

  • 4 cups of water or vegetable broth

  • Salt and pepper to taste

  • Grated cheese (optional)

Directions

  • Heat the pressure cooker over medium heat and add the olive oil. 
    Sauté the onion and garlic until golden.
  • If using ground beef, add it to the pan and sauté until cooked through and browned.
  • Add the carrots and red bell pepper to the pan and saute for a few minutes, until the vegetables are slightly soft.
  • Add the peeled tomato with the liquid and mash it with a wooden spoon to break it up a bit. 
    Season with salt and pepper to taste.
  • Place the noodles in the pressure cooker and pour the water or vegetable stock over the top, making sure the noodles are completely covered by the liquid.
  • Close the pressure cooker according to the manufacturer’s instructions and cook over medium-high heat. 
    As soon as the pan starts to whistle, lower the heat to medium-low and cook for about 5 to 6 minutes.
  • Turn off the heat and let the pressure release naturally from the pan before opening. 
    Be careful opening the pot as the steam will be hot.
  • Mix the cooked pasta well and serve hot. 
    If desired, sprinkle grated cheese on top before serving.
